2. Coconut Chutney (Nariyal Chutney)

Ingredients: 1 cup grated fresh coconut, 2 green chilies, 1-inch piece of ginger, salt to taste.

Method: Blend the coconut, chilies, ginger, and salt with a splash of water until smooth. For extra flavor, temper the chutney with mustard seeds, urad dal, and curry leaves. This pairs beautifully with dosa and idli.

3. Tomato Chutney (Tamatar Chutney)

Ingredients: 3 tomatoes, 2–3 garlic cloves, 1 teaspoon oil, salt and red chili powder to taste.

Method: Lightly roast the tomatoes and garlic in oil. Let them cool, then blend into a paste. Cook the mixture with salt and red chili powder for a few minutes. Enjoy with rice or parathas.

4. Raw Mango Chutney (Kacche Aam Ki Chutney)

Ingredients: 1 raw mango, ½ cup mint leaves, 2 green chilies, salt to taste.
