  • Cardamom powder – 1/4 teaspoon

Step-by-Step Method for Making the Halwa

Creating this rich, velvety halwa requires patience and attention to detail. Follow these steps to achieve the perfect texture and flavor.

Begin by heating the ghee in a heavy-bottomed pan or kadhai over a medium flame. Add the semolina and roast it gently, stirring continuously, until it turns a light golden brown and releases a nutty aroma. This step is crucial for the halwa’s final taste and consistency.

Once the semolina is perfectly roasted, carefully pour in the measured water. Stir vigorously and without pause to prevent lumps from forming. The mixture will bubble and hiss initially, but constant stirring will ensure a smooth blend.

Next, add the milk and continue to stir. Allow the mixture to come to a gentle simmer, then incorporate the sugar. Mix well until the sugar dissolves completely. Proper preparation ensures the chickpeas are tender and flavorful without being overly spiced, as the offering should remain pure and simple.

Start by soaking the black chickpeas in plenty of water overnight. This softens them and reduces cooking time. The next morning, drain the water and rinse the chickpeas thoroughly. Place them in a pot with fresh, clean water and boil for about 20 to 25 minutes, or cook them in a pressure cooker for two to three whistles until they are soft but not mushy.
