  • ½ cup powdered sugar
  • ½ cup milk
  • ¼ cup oil or melted butter
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla essence

These simple components come together to form a light, moist cake base. Feel free to add a pinch of cocoa powder for a chocolate version, or fold in some chopped nuts for extra texture.

Step-by-Step Method: Baking Without an Oven

Prepare Your Stovetop “Oven”

Start by selecting a large, heavy-bottomed pan or a deep kadhai with a tight-fitting lid. Spread a thin, even layer of salt across the bottom of the pan. The salt helps distribute heat evenly and prevents the cake tin from direct contact with the pan’s surface. Cover the pan with its lid and preheat it over medium flame for about 10 minutes. This step mimics the preheating of a conventional oven.

Mix the Cake Batter

While the pan heats, prepare the batter. In a mixing bowl, combine the powdered sugar, milk, and oil or melted butter. Whisk until the sugar dissolves and the mixture looks smooth. Sift the all-purpose flour, baking powder, and baking soda together into the wet ingredients. Add the vanilla essence and gently fold everything together until you have a uniform, lump-free batter. Avoid overmixing, as this can make the cake dense.

Grease and Fill the Cake Tin

  • Check early: Ovens and stovetops vary, so begin testing for doneness at the 30-minute mark.
  • Let it rest: Warm cake is fragile. Allowing it to cool fully makes slicing and decorating much easier.
