Holi is here, and the festive spirit calls for the irresistible crunch of homemade gujiya. Whether you’re following a cherished family recipe or a tutorial, the real challenge often begins when the gujiya hits the hot oil. One small mistake can cause the pastry to split open, spilling the sweet filling into the oil and ruining both the taste and texture. But don’t worry—cracking gujiya is a common issue, and it can be fixed with the right techniques.

When a gujiya bursts, the filling—usually khoya or sooji—leaks into the oil, turning it dark and bitter. This not only spoils the oil but also affects the other gujiya in the batch. The good news is that with a few simple adjustments, you can protect your oil, preserve the sweetness, and enjoy perfectly fried gujiya every time.

Why Do Gujiya Crack During Frying?

Understanding the root causes is the first step to preventing cracks. Here are the most common reasons:

  • The edges were not sealed properly.
  • The filling was too generous, causing excess pressure.
  • The dough was too soft or loose.
  • The oil temperature was too high.
  • Moisture remained in the gujiya before frying.

Immediate Steps to Take When a Gujiya Bursts in Oil

If you notice a gujiya cracking in the kadhai, act quickly to minimize damage:

Lower the Heat Immediately

High heat will only make the crack worse. Turn the flame down to medium-low right away.

Remove the Leaked Filling

Use a slotted spoon to scoop out any khoya or sooji that has escaped into the oil. If left, it will burn and turn the oil bitter.

Strain the Oil

If two or three gujiya have burst and the oil is full of filling, turn off the gas. Let the oil cool slightly, then strain it through a fine mesh sieve or muslin cloth. This will restore the oil for further use.

How to Prevent Future Gujiya from Cracking

Once you’ve managed the damage, adjust your technique for the remaining gujiya:

Seal the Edges Properly

Apply a thin layer of water or a paste of flour and water along the edges. Press firmly with a fork to create a decorative seal. Using a gujiya mold can also ensure a tight closure.

Don’t Overfill

Fill each gujiya to about 70-75% capacity. Too much filling increases internal pressure during frying, leading to cracks.

Knead a Stiffer Dough

The dough for gujiya should be slightly firmer than roti dough. A soft dough weakens in hot oil and is more prone to breaking.

Let the Gujiya Rest Before Frying

Place the filled gujiya on a cloth and let them air-dry for 10-15 minutes. This helps the outer layer firm up, reducing the risk of cracking.

Fry at Medium Heat

If the oil is too hot, the gujiya will brown quickly on the outside while the inside builds up steam and pressure, causing it to burst. Maintain a steady, medium flame for even cooking.

Tips to Keep Your Oil Clean

Clean oil is essential for good-tasting gujiya. Follow these practices:

  • Start with fresh, clean oil.
  • Remove any burnt particles from the oil after each batch.
  • Avoid overcrowding the kadhai—fry only 4-5 gujiya at a time, depending on the size of your vessel.

Can You Salvage a Burst Gujiya?

Absolutely. If the gujiya isn’t badly burnt, don’t throw it away. Crumble it up and mix with dry fruits to create a delicious gujiya crumble dessert. You can also use it as a topping for rabri or ice cream. A little creativity can turn a mishap into a new treat.

A Pro Tip from Sweet Makers

Always add 2-3 tablespoons of ghee or oil (moiyan) to the dough. This ensures a flaky, crisp texture. Also, gently press each gujiya before frying to release any trapped air inside. This small step can make a big difference in preventing cracks.
