This approach is both budget-friendly and time-saving. By preparing one batch of batter in advance, you unlock a week of quick, delicious breakfasts that never feel the same. Below, you’ll find the method for making the batter itself, followed by five distinct dishes you can whip up from it.

How to Prepare the Multipurpose Batter

Ingredients You’ll Need

  • 3 cups of rice
  • 1 cup of urad dal (split black gram)
  • 1 teaspoon of fenugreek seeds
  • Salt to taste
  • Water as required

Step-by-Step Instructions

Step 1: Wash the rice, urad dal, and fenugreek seeds separately. Soak them in water for six to eight hours.

Step 2: First, grind the urad dal into a smooth paste. Then, grind the rice to a slightly coarse consistency.

Step 3: Combine the ground dal and rice in a large bowl. Mix well to form a thick batter.

Step 4: Add the ground fenugreek seeds to the batter and stir thoroughly.

Step 5: Cover the bowl and let the batter ferment in a warm spot for eight to twelve hours. Do not refrigerate it during this stage.

Step 6: Once the batter has risen and appears airy, add salt and mix gently. Your base is now ready to use.

Five Dishes You Can Make from the Same Batter

1. Classic Crispy Dosa

Thin the fermented batter by adding a little water until it reaches a pouring consistency. Heat a flat griddle or tawa, grease it lightly, and spread a ladleful of batter in a circular motion. Drizzle a few drops of oil around the edges. Cook until golden and crisp, then fold and serve hot with chutney or sambar.

2. Soft and Fluffy Idli

Use the batter in its original thick form. Grease idli molds and fill each cavity with batter. Steam for ten to twelve minutes until the idlis are cooked through and springy to the touch. Let them cool slightly before removing. Pair with coconut chutney and sambar for a classic breakfast.

3. Vegetable Uttapam

Finely chop vegetables such as onions, tomatoes, bell peppers, carrots, and green chilies. Mix them into the batter. Pour a thick layer onto a greased tawa, spreading it gently into a round pancake shape. Cook on medium heat until the bottom is golden and the top is set. Flip carefully and cook the other side. Serve with a dollop of butter and chutney.

4. Golden Appe (Pan-Fried Dumplings)

Heat an appe pan or aebleskiver pan and add a few drops of oil to each cavity. Fill each mold with the batter almost to the top. Cook until the edges turn golden and the center is firm. Use a skewer to flip the dumplings and cook the other side evenly. These bite-sized treats are perfect with spicy chutney.

5. Spiced Paniyaram

Enhance the batter with finely chopped onions, green chilies, curry leaves, and a pinch of asafoetida. Pour this seasoned batter into a greased appe pan and cook as you would for regular appe. The added aromatics give these dumplings a bold, savory flavor that works well for breakfast or as an evening snack.

Tips for Best Results

  • Always soak the rice and dal for at least six hours to ensure smooth grinding.
  • Fermentation time may vary depending on the climate. In cooler weather, keep the batter in a warm oven or near a heat source.
  • Store leftover batter in an airtight container in the refrigerator. It stays good for three to four days.
  • If the batter becomes too thick after refrigeration, add a splash of water and stir before using.
