Commercially produced amchur powders sometimes contain additives to extend shelf life or enhance colour. These extras are unnecessary and can detract from the pure, vibrant taste of dried raw mango. By making it yourself, you retain complete control over the quality. You ensure the spice is free from any artificial substances, delivering a cleaner, more authentic sourness to your dishes. What You Need to Begin

Surprisingly, only one ingredient is required: fresh, firm raw mangoes. Choose specimens that are unripe, free from blemishes, and have a vibrant green skin. The freshness of the mango directly impacts the final powder’s flavour, so selecting high-quality fruit is the most important step.

Step-by-Step Guide to Perfect Amchur

Preparing the Mangoes

Start by thoroughly washing the raw mangoes to remove any dirt or residue. Using a sharp peeler, remove the skin completely. Then, slice the flesh into thin, even pieces. The thinner the slices, the faster and more evenly they will dry, resulting in a superior powder texture.

Drying in the Sun

Spread the mango slices in a single layer on a clean cloth, bamboo tray, or a mesh rack. Place them under direct, strong sunlight. Depending on the weather and the thickness of your slices, this drying process typically takes three to four days. Bring the tray indoors at night to protect the mango from moisture. The slices are ready when they become brittle, crisp, and snap easily without any flexibility. Ensure no residual moisture remains, as this can lead to mould growth during storage.

Grinding into Powder

Once the dried mango pieces are completely cool, transfer them to a high-powered blender or spice grinder. Pulse until you achieve a fine, consistent powder. For an ultra-smooth texture, pass the ground powder through a fine-mesh sieve. Any larger bits left in the sieve can be ground again.

Storing Your Homemade Spice

Immediately transfer the finished amchur powder into a clean, dry, airtight container. Glass jars with tight-fitting lids work beautifully. Keep the container in a cool, dark, and dry place, away from the stove or any source of steam. When stored correctly, this homemade powder retains its potent tang and aroma for up to twelve months.

Tips for Best Results

  • Always use raw, unripe mangoes. Ripe or semi-ripe mangoes contain sugars that will affect drying and storage.
  • Slice the mangoes uniformly to ensure even drying. Uneven pieces may lead to some parts remaining damp.
  • If sunlight is limited, you can use a food dehydrator set to a low temperature (around 50°C or 120°F) until the slices are crisp.
  • Do not add salt, sugar, or any other spices during the grinding process. Pure amchur is versatile and can be seasoned later according to the recipe.
  • Label your container with the date of preparation to keep track of freshness.
