Method

Heat the milk in a heavy-bottomed pan until it comes to a gentle boil. Reduce the flame to low and slowly add the lemon juice or vinegar while stirring. The milk will begin to curdle almost immediately. Once the whey separates completely and turns a light greenish color, turn off the heat.

Line a colander with the muslin cloth and pour the curdled mixture through it. Rinse the paneer gently under cold running water to remove any sourness from the acid. Gather the cloth and squeeze out as much excess water as possible. Tie the cloth tightly and place a heavy weight — such as a filled pan or a cast-iron skillet — on top. Let it press for 30 to 60 minutes, depending on how firm you want the paneer. Unwrap, cut into desired shapes, and use immediately or store in the refrigerator.

Method

After boiling milk, allow it to cool completely at room temperature. Place the pot in the refrigerator and let it sit undisturbed for 8 to 10 hours. A thick layer of cream will form on the surface. Gently scrape this layer off with a spoon and collect it in a separate container. Repeat this process each time you boil milk, adding the collected cream to the same jar. This accumulated cream can be used as a rich addition to desserts, curries, or even whipped for toppings.

How to Make Ghee at Home

Ingredients

  • Collected cream or homemade butter

Method

If starting from cream, churn it into butter first. Place the butter in a heavy-bottomed pan over low heat. Let it melt slowly. The butter will foam, then settle as the water content evaporates. Continue heating gently. The milk solids will sink to the bottom and turn golden brown, releasing a nutty aroma. Once the butter turns a clear, golden color and smells fragrant, turn off the heat. Allow it to cool slightly, then strain through a fine-mesh sieve or muslin cloth into a clean, dry glass jar. Store at room temperature.

How to Make Simple Soft Cheese at Home

  • 1 liter full-fat milk
  • 2–3 tablespoons lemon juice
  • A pinch of salt
  • 1 tablespoon butter (optional, for richness)

Method

Heat the milk gently until it is hot but not boiling. Add the lemon juice and stir until the milk curdles. Strain the curds through a muslin cloth and let the whey drain away. Transfer the curds to a bowl. Add salt and the optional butter. Blend the mixture with a hand blender or fork until smooth and creamy. Spoon the mixture into a small mold or container and refrigerate for several hours until it sets. This soft cheese is spreadable and mild, perfect for toast, crackers, or stuffing into vegetables.
